Balsamic Skewers

Ingredients:

  • 3 cups of your favorite veggies, diced
  • 1/4 cup of olive oil
  • 1/3 cup of balsamic vinegar
  • salt
  • pepper
  • Greek yogurt, for dipping (optional)

Directions:

  1. Add the vegetables to a large baking tin with high sides.
  2. Mix the olive oil, balsamic vinegar, salt, and pepper together, then pour over the veggies.
  3. Marinate for 30 minutes, then preheat oven to 350.
  4. Bake for 15 minutes, then cool slightly. 
  5. Skewer veggies and enjoy with your favorite dips!
