- 3 cups of your favorite veggies, diced
- 1/4 cup of olive oil
- 1/3 cup of balsamic vinegar
- Greek yogurt, for dipping (optional)
- Add the vegetables to a large baking tin with high sides.
- Mix the olive oil, balsamic vinegar, salt, and pepper together, then pour over the veggies.
- Marinate for 30 minutes, then preheat oven to 350.
- Bake for 15 minutes, then cool slightly.
- Skewer veggies and enjoy with your favorite dips!
