Healthy Smashed Potatoes

  • 1 lb of fingerling potatoes washed
  • salt
  • olive oil
  • fresh rosemary


  • Preheat the oven to 375. In a large pot, boil the fingerling potatoes until easily pierced with a fork. Drain.
  • Add potatoes to a cast iron skillet and use a spatula to smash.
  • Drizzle with 1-2 TBSP of olive oil, then season with salt and fresh rosemary sprigs.
  • Bake for 20 minutes, until browned and crispy.
