Balsamic Skewers


  • 3 cups Your Favorite Veggies diced
  • ¼ cup Olive Oil
  • cup Balsamic Vinegar
  • Salt
  • Pepper
  • Greek Yogurt for dipping (optional)


  • Add the vegetables to a large baking tin with high sides.
  • Mix the olive oil, balsamic vinegar, salt, and pepper together, then pour over the veggies.
  • Marinate for 30 minutes, then preheat oven to 350.
  • Bake for 15 minutes, then cool slightly. 
  • Skewer veggies and enjoy with your favorite dips!
