Beef Enchilada Salad with übr water

Beef Enchilada Soup

Ingredients
  

  • 2 tbsp. Olive Oil
  • 1 medium Carrot peeled and diced
  • 2 stalks Celery chopped thin
  • 3 cloves Garlic minced
  • 1 red Bell Pepper diced
  • ½ cup Chopped Cilantro plus more for garnish
  • 1 lb. Lean Ground Beef
  • 1 ½ tsp. Ground Cumin
  • 1 tsp. Oregano
  • 1 tsp. Chili Powder
  • Salt & Pepper to taste
  • 1 14 oz. can Tomato Sauce
  • 1 14 oz. can Diced Fire Roasted Tomatoes
  • 4 cups Chicken Broth
  • 1 small bag Frozen Corn
  • 1 15 oz. can Black Beans drained & rinsed
  • 1 15 oz. can Red Kidney Beans drained & rinsed
  • 3 tbsp. Corn Starch plus 3 tbsp Water whisked together in a small cup to thicken the soup
  • Optional Ingredients for Garnishing: 1 jalapeño, sliced thin, shredded cheddar cheese, sour cream, sliced avocado

Instructions
 

  • Prepare ingredients. In a large stock pot or soup kettle, heat olive oil over medium high heat and sauté the chopped carrots, celery, garlic, and red bell pepper for about 5 minutes. Push veggies to one side of pan and add the uncooked ground beef and chop it up to start browning it.
  • Once beef is browned and veggies have cooked, add your seasonings followed by the fire roasted tomatoes, tomato sauce and chicken broth. Bring to a boil and let simmer for about 20 minutes.
  • Add kidney beans, black beans, frozen corn and cilantro to soup. Turn up the heat again and bring to a soft boil and slowly pour in your cornstarch/water mixture to the soup. Stirring constantly while it is boiling, until thick.
  • Serve with optional toppings!
