Blueberry Protein Muffins


  • 2 ½ cups Protein-Enhanced Pancake Mix
  • ¼ cup Granulated Sugar
  • 1 tsp. Cinnamon
  • 1 cup Oat Milk
  • ¼ cup Vegetable Oil
  • 1 large Egg
  • 1 tsp. Vanilla Extract
  • 1 cup Blueberries fresh or frozen


  • Preheat your oven to 400. Line a muffin tin with paper liners and set aside.
  • In a large bowl, combine the pancake mix, granulated sugar, and cinnamon. Mix.
  • In a separate bowl, whisk together milk, vegetable oil, egg, and vanilla extract. Pour wet ingredients into dry, then stir gently until just combined.
  • Fold in the blueberries.
  • Spoon the batter into the muffin tin, filling each tin about 3/4 full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • These go great with butter and syrup!
