Broccolini and Red Pepper Crostini
- 1 Head of Broccolini
- Olive Oil
- Salt and Pepper
- 1 Roasted Red Pepper drained
- 4 slices Baguette
- First, preheat your oven to 375.
- Toss the broccolini with about a tablespoon of olive oil and season with salt and pepper.
- Roast until bright green and slightly browned, about 15 minutes.
- Chop the roasted red pepper, then toss with broccolini.
- Top sliced baguette with mixture, then serve warm. Serves 2.
