Broccolini and Red Pepper Crostini


  • 1 Head of Broccolini
  • Olive Oil
  • Salt and Pepper
  • 1 Roasted Red Pepper drained
  • 4 slices Baguette


  • First, preheat your oven to 375.
  • Toss the broccolini with about a tablespoon of olive oil and season with salt and pepper.
  • Roast until bright green and slightly browned, about 15 minutes.
  • Chop the roasted red pepper, then toss with broccolini.
  • Top sliced baguette with mixture, then serve warm. Serves 2.
