Preheat the oven to 400°F. Lay out baguette slices on a sheet pan, brush lightly with olive oil, sprinkle with salt, and bake for 6–8 minutes until lightly golden.
If using regular goat cheese, whip with a hand mixer or whisk until creamy. You can also mix in a teaspoon of honey if you want it a touch sweeter.
Spread each crostini with a generous layer of goat cheese. Add a small spoonful of cherry preserves on top.
Drizzle with extra honey, if not already added to the goat cheese, and sprinkle fresh thyme over each piece.
Best served slightly warm or at room temperature.
