Chicken Sausage Summer Stir Fry


  • 1 PKG 4-6 Precooked Chicken Sausages sliced into ½” coins
  • 2 Ears of Corn scrape corn off the cob
  • 1 Red Bell Pepper chopped into 1” squares
  • 1 Zucchini sliced in 1” chunks or slices
  • ¼ cup Parmesan Cheese
  • 3 tbsp. Olive Oil
  • Juice of 1 lemon
  • 1 tbsp. Butter
  • Handful of Fresh Chopped Cilantro
  • Salt & Pepper to Taste add any other optional herbs that you may desire


  • Heat a large skillet on the stove top on medium high heat, add 2 tbsp olive oil. Sauté the pieces of red pepper for 3 minutes, then add in the sliced zucchini. Continue sautéing an additional 3 minutes before adding 1 more tablespoon of olive oil, the chicken sausage coins and the shaved corn. Sauté until there is a nice char on the sausage coins.
  • Add 1 tbsp of butter to the skillet and allow butter to melt into the ingredients and toss to combine. Add salt and pepper, chopped cilantro and a squeeze of 1 lemon. Garnish dish with fresh grated Parmesan cheese before serving. Enjoy!
