Chocolate Protein Truffles
- 1 cup dark chocolate
- 1 scoop chocolate protein powder
- 1 cup peanut butter
- 2 tbsp coconut oil
- Cacao nibs optional
- In a microwave safe bowl or a double boiler, melt the dark chocolate, protein powder, peanut butter, and coconut oil together. Stir until smooth.
- Chill until thick, then roll into truffles.
- If desired, roll truffles in cacao nibs for added texture.
- Keep chilled.
