If making homemade cranberry sauce: Combine all ingredients into a large pot over medium high heat. Stirring occasionally, cook until tender and all the cranberries have “popped,” about 10-12 minutes. Reduce heat to low to simmer 10 minutes. Remove from heat and let cool to room temperature.
Preheat oven to 375F. Line a baking pan with parchment paper.
In a small bowl, mix the mustard, honey, and fresh rosemary together.
Place the puff pastry sheet on a lightly floured surface.
Brush the mustard sauce over the puff pastry.
Evenly distribute the cranberry sauce.
Add a single layer of the thinly sliced brie.
Lastly, evenly distribute the crushed nuts.
Roll up the puff pastry lengthwise tightly.
Using a sharp knife, carefully slice the puff pastry roll into ½” thick slices.
Place flat side down on the prepared pan.
Bake for 20-25 minutes, until puffed, flaky, and golden brown.
