Divide the goat cheese into 10-12 sections. Roll each section into a ball, then place on a parchment paper lined plate. Freeze until firm, about 20-30 minutes.
Heat up the frying oil to 350 – 375F.
Set up your battering station with three bowls. In the first bowl, add the flour. In the second bowl, add the beaten eggs. In the third bowl, mix together the panko breadcrumbs, herb seasoning, paprika, and garlic powder.
Dip each goat cheese ball into the flour, then the beaten eggs, then the panko mixture. If you want them extra crispy, dip back into the beaten eggs and again in the panko mixture for a double coating.
Fry in small batches for 4-5 minutes, until golden brown on all sides.
Use a slotted spoon to transfer to a paper towel lined wire rack.
In a small bowl, mix the honey and hot sauce together, then drizzle on the goat cheese balls.
