Garden Tomato & Whipped Feta Crostini

  • Klarbrunn Cherry Lime Sparkling Water for serving
  • 1 French Baguette cut into ½ inch slices
  • 8 oz. block Feta Cheese
  • ½ cup Greek Yogurt
  • 5 tbsp. Olive Oil
  • 1 Lemon
  • 1 pint Cherry Tomatoes halved
  • ¼ cup Fresh Herbs chopped (such as basil, oregano, mint, dill)
  • Zest of 1 Orange
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
  • ¼ cup Honey


  • In a jar or bowl, combine the cherry tomatoes, 3 tbsp. olive oil, freshly chopped herbs, orange zest, lemon zest, salt, and black pepper. Cover and set aside in the fridge to marinate for at least 30 minutes.
  • Preheat oven to broil on HIGH. Line a baking pan with parchment paper.
  • Add the sliced bread on the prepared pan. Drizzle with 1-2 tbsp. olive oil on both sides of the bread slices. Broil for 1-2 minutes on each side, until golden and crispy.
  • In a small blender or food processor, combine the feta, yogurt, and lemon juice. Pulse until smooth. Season with salt and black pepper to taste.
  • To assemble, spread a generous slather of the whipped feta over each crostini, then spoon on the tomatoes and juices. Drizzle with a little honey and (optional) flaky sea salt to taste.
