Hawaiian BBQ Sheet Pan Dinner

Ingredients
  

  • 1 Red Bell Pepper diced
  • 1 Orange or Yellow Bell Pepper diced
  • 1 cup Pineapple
  • ½ of a Red Onion diced
  • 1 ½ lbs. Chicken Tenderloins diced
  • 5 Strips Bacon chopped
  • ¼ cup Olive Oil or Avocado Oil
  • ½ cup Sugar Free BBQ Sauce plus more for topping
  • 1 tsp. Garlic Powder
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 1 tsp. Dried Cilantro
  • 1 Lime
  • ¼ cup Cilantro chopped

Instructions
 

  • Preheat oven to 400 degrees. Prepare the peppers, pineapple, red onion, chicken and bacon. Chop everything into about 1” pieces or chunks. Combine those ingredients (except the pineapple) in a large bowl, drizzle with oil and stir to combine.
  • In a small cup, combine the garlic powder, salt, pepper and dried cilantro and sprinkle over everything in the bowl. Transfer everything in the bowl to a lined sheet pan and spread out in an even layer. Drizzle with 1/2 cup of bbq sauce. Baked for about 15minutes.
  • After 15 minutes, remove from oven, add pineapple chunks to the sheet pan. Put back in the oven for an additional 15 minutes and finish off under the broiler for a couple minutes until bacon starts to crisp. Add fresh squeezed lime juice all over and top with fresh chopped cilantro. Service with rice if desired and drizzle with more sugar free BBQ.
