
Healthier Italian Pasta Salad
Ingredients
- 1 cup Uncooked Orzo Pasta cooked, drained and chilled
- ½ cup Red Pepper diced
- ½ cup Grape or Cherry Tomatoes diced
- ½ cup English Cucumber diced
- ½ cup Kalamata Olives Sliced
- ½ cup Green Olives Sliced
- ⅓ cup Pepperoncini chopped
- ¼ cup Green Onion sliced
- ¼ cup Italian Parsley chopped
- ¼ cup Basil chopped
- ⅓ cup feta cheese optional
For the dressing
- ¼ cup Olive Oil
- Squeeze of 1 whole lemon
- ½ tsp. Salt
- ½ tsp. Black Pepper
- 1 tsp. Dijon Mustard
- ¼ tsp. Garlic Powder
- 1 tsp. Dried Oregano
Instructions
- Whisk together dressing ingredients and set aside. Cook pasta according to package instructions then drain and set aside to chill.
- While pasta is cooking, prepare ingredients as listed above. Combine in a large bowl, toss and add dressing to coat. Toss again.
- Store in refrigerator, enjoy for 5 days!
