Healthier Italian Pasta Salad

Ingredients
  

  • 1 cup Uncooked Orzo Pasta cooked, drained and chilled
  • ½ cup Red Pepper diced
  • ½ cup Grape or Cherry Tomatoes diced
  • ½ cup English Cucumber diced
  • ½ cup Kalamata Olives Sliced
  • ½ cup Green Olives Sliced
  • cup Pepperoncini chopped
  • ¼ cup Green Onion sliced
  • ¼ cup Italian Parsley chopped
  • ¼ cup Basil chopped
  • cup feta cheese optional

For the dressing

  • ¼ cup Olive Oil
  • Squeeze of 1 whole lemon
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
  • 1 tsp. Dijon Mustard
  • ¼ tsp. Garlic Powder
  • 1 tsp. Dried Oregano

Instructions
 

  • Whisk together dressing ingredients and set aside. Cook pasta according to package instructions then drain and set aside to chill.
  • While pasta is cooking, prepare ingredients as listed above. Combine in a large bowl, toss and add dressing to coat. Toss again.
  • Store in refrigerator, enjoy for 5 days!
