Healthy Gingerbread Snacking Cake

Ingredients
  

  • ½ cup White Sugar
  • ½ cup Plain Kefir full fat
  • ½ cup Olive Oil
  • ¼ cup Molasses
  • 2 Eggs
  • 1 tsp. Vanilla Extract
  • 2 tbsp. Maple Syrup
  • 2 tsp. Gingerbread Spice Mix
  • 1 tsp. Kosher Salt
  • 1 ½ cups Flour
  • 1 ½ tsp. Baking Powder
  • ½ tsp. Baking Soda
  • Powdered Sugar for dusting

Instructions
 

  • Preheat the oven to 350, and grease and line a 9×9 inch baking tin. Set aside.
  • Mix the sugar, kefir, olive oil, molasses, eggs, vanilla extract, and maple syrup in a medium bowl.
  • Add the gingerbread spice mix, salt, flour, baking powder, and baking soda, and mix until smooth.
  • Pour the batter into the prepared tin, then bake for 25-30 minutes, until a toothpick comes out clean.
  • Dust with powdered sugar and serve.
