
Healthy Smashed Potatoes
Ingredients
- 1 lb Fingerling Potatoes washed
- Salt
- Olive Oil
- Fresh Rosemary
Instructions
- Preheat the oven to 375. In a large pot, boil the fingerling potatoes until easily pierced with a fork. Drain.
- Add potatoes to a cast iron skillet and use a spatula to smash.
- Drizzle with 1-2 TBSP of olive oil, then season with salt and fresh rosemary sprigs.
- Bake for 20 minutes, until browned and crispy.
