Healthy Zucchini Fries
- 1 large zucchini cut in half and then trimmed into 1/4 inch thick slices
- 2 tbsp avocado oil
- 1 cup panko breadcrumbs
- 1 tsp paprika
- 1 tsp salt
- Preheat oven to 450, and line a sheet tray with parchment paper.
- Toss the zucchini slices with the oil, then sprinkle with panko, paprika, and salt. Toss to coat.
- Lay the zucchini slices out on the sheet tray, then bake for 20 minutes, until golden brown. Serve with ketchup!
