Healthy Zucchini Fries

Ingredients
  

  • 1 large zucchini cut in half and then trimmed into 1/4 inch thick slices
  • 2 tbsp avocado oil
  • 1 cup panko breadcrumbs
  • 1 tsp paprika
  • 1 tsp salt

Instructions
 

  • Preheat oven to 450, and line a sheet tray with parchment paper.
  • Toss the zucchini slices with the oil, then sprinkle with panko, paprika, and salt. Toss to coat.
  • Lay the zucchini slices out on the sheet tray, then bake for 20 minutes, until golden brown. Serve with ketchup!
