Preheat oven to 375 degrees. Line a baking sheet with tin foil or parchment paper and spray with some nonstick spray.
In a large bowl, combine all meatball ingredients. Use your hand or a large spoon or spatula to combine. Roll out 16 meatballs onto prepared baking sheet. Bake 15-20 minutes or until meatballs are no longer pink in the middle.
In a small bowl, whisk together sauce ingredients and transfer to a small saucepan on the stove. Bring to a boil then simmer on low for about 10 minutes or until sauce has reduced and thickened.Pour over cooked meatballs.
Optional but best served with some cooked rice, a vegetable and chopped cilantro.
