Incredibly Moist Carrot Cake

For the Carrot Cake

  • Klarbrunn Citrus Blend Sparkling Water for serving
  • 2 cups Flour
  • 2 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1 ½ tsp. Ground Cinnamon
  • ¼ tsp. Ground Nutmeg
  • ¼ tsp. Fine Sea Salt
  • ¾ cup Olive Oil
  • 4 large Eggs
  • 1 cup Brown Sugar
  • ½ cup Granulated Cane Sugar
  • 2 ½ cups Grated Carrots lightly packed
  • 1 tsp. Vanilla Extract
  • ½ cup Applesauce

For the Cream Cheese Frosting

  • ½ cup Softened Unsalted Butter
  • 8 oz. Softened Cream Cheese
  • 2 ½ – 3 cups Powdered Sugar
  • 1 tsp. Vanilla Extract or vanilla bean paste


For the Carrot Cake

  • Preheat oven to 350F. Butter and line the bottoms with parchment paper either two 8” cake pans, or three 6” cake pans.
  • In a large bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.
  • In the bowl of a stand mixer, beat the eggs until smooth, about 2 minutes.
  • Add the olive oil, brown sugar, granulated cane sugar, applesauce, and vanilla to beat on HIGH for 1 minute.
  • Add the flour mixture and mix just until combined. It’s okay to still have a few flour clumps.
  • Fold in the grated carrots.
  • Evenly divide the batter between the prepared cake pans.
  • Bake for 25-35 minutes, until a toothpick inserted into the center comes out clean.
  • Let cool in the pans for 10 minutes, then remove to cool completely on a baking wire rack.

For the Cream Cheese Frosting

  • In the bowl of a stand, beat the softened cream cheese and butter on HIGH for 2-3 minutes, until smooth.
  • Add the vanilla and 2 cups powdered sugar. Beat until light and fluffy, adding more powdered sugar if too wet or a dash of heavy cream if too stiff.
  • If piping on the mini carrots, you’ll want to remove 1/3 cup frosting for the orange carrots and ¼ cup for the green stems.
  • Transfer to a piping bag.

To Assemble

  • Add about ½ cup frosting in-between each cake layer, using an offset spatula to evenly spread it out.
  • Use the offset spatula to frost the exterior of the cake.
  • (Optional) Garnish with chopped walnuts and decorate with the mini frosting carrots.
