Start by preheating oven to 400 degrees. In a small bowl, toss together diced sweet potatoes, olive oil and salt and pepper, bake on a lined baking sheet for about 20 minutes or until the potatoes are fork tender. Let potatoes cook and set aside.
In a medium skillet, brown the ground beef over medium-high heat until no longer pink. Set aside.
Take a large plate, add shredded lettuce, topped with a scoop of ground beef (amount you would like to use is a personal preference), sweet potatoes, shredded cheese, tomatoes and chopped dill pickles. Sprinkle the entire salad with Everything Bagel Seasoning. Add your favorite healthy salad dressing.
