Loaded Cheeseburger Salad

Ingredients
  

  • 1 Sweet Potato peeled and diced into 1”cubes
  • 1 tbsp. Olive Oil
  • ½ tsp. Salt
  • ½ tsp. Pepper
  • 1 lb. Cooked Lean Ground Beef
  • 2-3 cups Shredded Iceberg Lettuce
  • 1 Dill Pickle chopped
  • ¼ cup Shredded Cheddar Cheese
  • cup Cherry Tomatoes diced
  • 2 tsp. Everything Bagel Seasoning
  • Dressing of Choice
  • Optional additional toppings: chopped red onion, crumbled bacon, diced avocado, etc.

Instructions
 

  • Start by preheating oven to 400 degrees. In a small bowl, toss together diced sweet potatoes, olive oil and salt and pepper, bake on a lined baking sheet for about 20 minutes or until the potatoes are fork tender. Let potatoes cook and set aside.
  • In a medium skillet, brown the ground beef over medium-high heat until no longer pink. Set aside.
  • Take a large plate, add shredded lettuce, topped with a scoop of ground beef (amount you would like to use is a personal preference), sweet potatoes, shredded cheese, tomatoes and chopped dill pickles. Sprinkle the entire salad with Everything Bagel Seasoning. Add your favorite healthy salad dressing.
