Patriotic Vanilla Custard & Berries Puff Pastry

  • Klarbrunn Blueberry Passionfruit Sparkling Water for serving
  • 1 sheet Frozen Puff Pastry thawed
  • 2 cups Whole Milk
  • 2 tsp. Vanilla Extract or vanilla bean paste
  • 6 large Egg Yolks
  • ¾ cup Granulated Cane Sugar
  • 6 tbsp. Flour
  • ½ stick Butter softened and cubed
  • Fresh Blueberries for decorating
  • Fresh Raspberries for decorating
  • Fresh Blackberries for decorating


To Make the Vanilla Custard

  • In a medium-sized saucepan, combine the milk and vanilla. Heat up over medium heat until hot.
  • In a large bowl, whisk the egg yolks, sugar, and flour vigorously for 2-3 minutes, until light and smooth.
  • Slowly drizzle the milk into the egg mixture while whisking, then pour back into the saucepan to place over medium heat. Whisk continuously for 3-4 minutes, until thickened. Remove from heat.
  • Transfer the vanilla custard back to the bowl to stir in the butter. Place plastic wrap over the top of custard to prevent it from forming a crust then place in the fridge to chill.

To Make the Puff Pastry

  • Preheat oven to 400F. Line a large baking pan with parchment paper, then lightly dust with flour.
  • Unroll the thawed puff pastry on the prepared pan.
  • Score the edges with a knife to leave a ½” border. Poke the inside of the scored puff pastry with a fork, brush with an egg wash, then bake for 20-25 minutes, until deep golden.
  • Let the puff pastry cool completely before layering with the vanilla custard and fresh berries.
