Pumpkin Muffins

Ingredients
  

Wet

  • 1 cup Canned Pumpkin
  • ¼ cup Maple Syrup
  • ¼ cup Melted Coconut Oil
  • 1 tsp. Vanilla Extract
  • 1 Flax Egg 1 tbs ground flaxseed, 3 tbs water

Dry

  • 2 cups Oat Flour
  • ½ cup Almond Flour
  • ¼ cup Coconut Sugar
  • ½ tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1 tsp. Cinnamon
  • 2 tsp. Pumpkin Spice
  • Pinch of Salt
  • ¼ cup Chocolate Chips

Instructions
 

  • Start by making your flax egg and set aside for 10 min.
  • Add all of your wet ingredients into a large bowl and whisk together.
  • Pour in dry ingredients and continue to evenly mix, Batter should be thick. Fold in chocolate chips.
  • Preheat oven to 350.
  • Scoop batter into a greased muffin tray, mine made about 9 muffins.
  • Smooth out the top of each muffin and top with more chocolate chips.
  • Bake for 18-20 min or evenly cooked through.
  • Let cook and enjoy!
