
Pumpkin Muffins
Ingredients
Wet
- 1 cup Canned Pumpkin
- ¼ cup Maple Syrup
- ¼ cup Melted Coconut Oil
- 1 tsp. Vanilla Extract
- 1 Flax Egg 1 tbs ground flaxseed, 3 tbs water
Dry
- 2 cups Oat Flour
- ½ cup Almond Flour
- ¼ cup Coconut Sugar
- ½ tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 tsp. Cinnamon
- 2 tsp. Pumpkin Spice
- Pinch of Salt
- ¼ cup Chocolate Chips
Instructions
- Start by making your flax egg and set aside for 10 min.
- Add all of your wet ingredients into a large bowl and whisk together.
- Pour in dry ingredients and continue to evenly mix, Batter should be thick. Fold in chocolate chips.
- Preheat oven to 350.
- Scoop batter into a greased muffin tray, mine made about 9 muffins.
- Smooth out the top of each muffin and top with more chocolate chips.
- Bake for 18-20 min or evenly cooked through.
- Let cook and enjoy!
