Summer Italian Salad

Ingredients
  

For the Salad

  • 2 cups Iceberg Lettuce chopped
  • 2 hearts Romaine Lettuce chopped
  • 1 cup Tomatoes diced
  • 1 cup Cucumber diced
  • ½ cup Black Olives sliced
  • ¼ lb. Genoa Salami sliced and chopped
  • 1 cup Low Fat Part-Skim Mozzarella Cheese shredded
  • ½ cup Garbanzo Beans (chickpeas)  drained and rinsed
  • ¼ cup Grated Parmesan cheese

For the Dressing

  • cup Olive Oil
  • ¼ cup Red Wine Vinegar
  • 1 tsp. Dijon Mustard
  • 1 tsp. Garlic minced
  • Pinch of Salt & Pepper
  • ½ tsp. Italian Seasoning
  • ½ tsp. Parsley

Instructions
 

  • Combine all salad ingredients in a large bowl, mix & toss.
  • Whisk together dressing ingredients and pour over salad. Toss to coat. This salad will serve about 6 people.
