
Summer Italian Salad
Ingredients
For the Salad
- 2 cups Iceberg Lettuce chopped
- 2 hearts Romaine Lettuce chopped
- 1 cup Tomatoes diced
- 1 cup Cucumber diced
- ½ cup Black Olives sliced
- ¼ lb. Genoa Salami sliced and chopped
- 1 cup Low Fat Part-Skim Mozzarella Cheese shredded
- ½ cup Garbanzo Beans (chickpeas) drained and rinsed
- ¼ cup Grated Parmesan cheese
For the Dressing
- ⅓ cup Olive Oil
- ¼ cup Red Wine Vinegar
- 1 tsp. Dijon Mustard
- 1 tsp. Garlic minced
- Pinch of Salt & Pepper
- ½ tsp. Italian Seasoning
- ½ tsp. Parsley
Instructions
- Combine all salad ingredients in a large bowl, mix & toss.
- Whisk together dressing ingredients and pour over salad. Toss to coat. This salad will serve about 6 people.
