In a small bowl, combine diced raw chicken tenderloin pieces, green onion, lime zest, olive oil, brown sugar and salt. Stir, then cover and marinate in the refrigerator for 2 hours minimum, or up to one day.
Remove marinated chicken from the refrigerator. Using a large skillet, heat to medium-high heat. Add marinated chicken and red pepper flakes, allowing chicken to cook and become “caramelized.” This may take up to 10 minutes. Add the shredded carrots and minced ginger half way through cooking the chicken. Once chicken is golden and caramelized, add peanuts and minced garlic. Stir to combine.
Squeeze the juice of the lime all over the chicken, then stir in chopped cilantro. Serve with rice and vegetables.
