
Vegan Cherry Cobbler
Ingredients
Fruit Mix
- 10 oz. Frozen Cherries
- ¼ cup Tapioca Flour
- 1 tsp. Cinnamon
- ⅓ cup Brown Sugar
Crust
- ½ cup Tapioca Flour
- ½ cup Hazelnut or Almond Flour
- 1 cup Sugar
- 1 tsp. Baking Powder
- 1 tsp. cinnamon
- 1 Flax Egg
- ½ cup Melted Vegan Butter
- (optional) Whipped Coconut Cream
- (optional) Basil
Instructions
- Preheat the oven to 350 and grease an 8×10 baking tin.
- Mix together all fruit mix ingredients, then add to tin.
- Mix together the flours, sugar, baking powder, and cinnamon for the crust.
- Stir in the flax egg, then crumble over the fruit.
- Drizzle with melted vegan butter.
- Bake for 1 hour, until fruit is bubbling and crust is browned.
- Serve with whipped coconut cream and basil.
