Vegan Cherry Cobbler

Ingredients
  

Fruit Mix

  • 10 oz. Frozen Cherries
  • ¼ cup Tapioca Flour
  • 1 tsp. Cinnamon
  • cup Brown Sugar

Crust

  • ½ cup Tapioca Flour
  • ½ cup Hazelnut or Almond Flour
  • 1 cup Sugar
  • 1 tsp. Baking Powder
  • 1 tsp. cinnamon
  • 1 Flax Egg
  • ½ cup Melted Vegan Butter
  • (optional) Whipped Coconut Cream
  • (optional) Basil

Instructions
 

  • Preheat the oven to 350 and grease an 8×10 baking tin.
  • Mix together all fruit mix ingredients, then add to tin.
  • Mix together the flours, sugar, baking powder, and cinnamon for the crust.
  • Stir in the flax egg, then crumble over the fruit.
  • Drizzle with melted vegan butter.
  • Bake for 1 hour, until fruit is bubbling and crust is browned.
  • Serve with whipped coconut cream and basil.
