Zingy Dutch Baby Brunch

Ingredients
  

  • 2 Eggs
  • ½ cup Greek Yogurt
  • 2 tbsp. Water
  • 1 tsp. Kosher Salt
  • Fresh Cracked Black Pepper
  • ½ cup Flour regular or chickpea
  • 2 tbsp. Avocado Oil
  • Mixed Greens for garnish
  • Hot Sauce for garnish
  • Corn Relish Salsa for garnish
  • Limes for garnish

Instructions
 

  • Preheat the oven to 425 with an ovenproof skillet inside of it. Let the oven come to temp and leave the skillet in until you're ready to use it.
  • In a large bowl, mix the eggs, yogurt, water, salt, pepper, and flour together until smooth. The mixture should be on the thin side, so add more water if the consistency is too thick.
  • Take the skillet out of the oven and add the avocado oil. Swirl to coat.
  • Pour the batter into the skillet, and put it back in the oven. Bake for 20 minutes.
  • When done, remove and let cool slightly. Dress with mixed greens, hot sauce, salsa, and limes.
